distillations clandestines r\u00e9alis\u00e9es du temps de la Prohibition que les fr\u00e8res Mayoux ont imagin\u00e9 la Distillerie des Bughes.<\/p>\n<p>Sans h\u00e9ritage ni tradition familiale pour ce qui est de la distillation, c&rsquo;est leur seule passion qui a guid\u00e9 ces deux fr\u00e8res \u00e0 exp\u00e9rimenter jusqu&rsquo;\u00e0 tard le soir en vue de cr\u00e9er des spiritueux.<\/p>\n<p>Aujourd&rsquo;hui \u00e0 la t\u00eate de la distillerie, B\u00e9renger Mayoux &#8211; autodidacte et adepte du syst\u00e8me D &#8211; peut \u00eatre consid\u00e9r\u00e9 comme le MacGyver du whisky Fran\u00e7ais !\u00a0Son approche du m\u00e9tier, aussi unique qu\u2019inattendue, nous laisse \u00e0 penser que ses 1ers whiskies (2020 !) ouvriront de nouvelles perspectives en terme de go\u00fbt et de texture. M.<\/p><\/blockquote>\n<p>Apr\u00e8s obtention de l\u2019agr\u00e9ment des douanes, la jeune distillerie commercialise tous les mois une production de 10 bouteilles de 100% malt \u00e9lev\u00e9 4 mois avec des copeaux de ch\u00eane am\u00e9ricain. Cette commercialisation est le r\u00e9sultat d\u2019ann\u00e9es de pratique ayant men\u00e9 \u00e0 une plus grande ma\u00eetrise de cette technique d\u2019infusion complexe\u00a0:<\/p>\n<blockquote><p>\u00ab\u00a0On peut faire de tr\u00e8s beaux spiritueux avec cette technique o\u00f9 le travail s\u2019axe davantage sur la c\u00e9r\u00e9ale que sur le bois. Une fois ma\u00eetris\u00e9e, il nous faut 1 an \u00e0 1 an et demi pour commercialiser un nouveau spiritueux.\u00a0\u00bb B. Les 1ers retours positifs sur ses spiritueux et sa passion pour la distillation l\u2019incitent \u00e0 franchir le pas. Exp\u00e9rimentation avec des copeaux de ch\u00eane fran\u00e7ais.<\/p>\n<p><strong>2017 :<\/strong>\u00a0Remplissage du 1er f\u00fbt destin\u00e9 \u00e0 devenir du whisky\u00a0! M.<\/p><\/blockquote>\n<p><strong>2020 :<\/strong>\u00a0Commercialisation du 1er whisky\u00a0!<\/td>\n<\/tr>\n<tr>\n<td>Personnages Cl\u00e9s<\/td>\n<td>\n<ul>\n<li><strong>B\u00e9renger Mayoux :\u00a0<\/strong>Fondateur et Ma\u00eetre-Distillateur.<\/li>\n<li><strong>Pierre-Henry Mayoux :\u00a0<\/strong>S\u2019il n\u2019est plus aujourd\u2019hui impliqu\u00e9 dans la distillerie, il n\u2019en est pas moins celui qui a le plus exp\u00e9riment\u00e9, transmettant savoir et passion \u00e0 son fr\u00e8re.<\/li>\n<\/ul>\n<p>Le projet a pu se concr\u00e9tiser gr\u00e2ce au concours de plusieurs autres acteurs :<\/p>\n<ul>\n<li><strong>Marion<\/strong>\u00a0: compagne de B\u00e9renger, son \u00e9nergie et son aide contribuent grandement au d\u00e9veloppement de la distillerie.<\/li>\n<li><strong>Vincent Legrand :\u00a0<\/strong>Caviste (Cave Marcon, Puy-en-Velay). Brass\u00e9, distill\u00e9 \u00e0 la distillerie des Bughes. Copeaux de ch\u00eane Fran\u00e7ais et d\u2019Oloroso &#8211; 43%. Elle est puis\u00e9e \u00e0 1000m d\u2019altitude sur le mont Dev\u00e8s.<\/td>\n<\/tr>\n<tr>\n<td>C\u00e9r\u00e9ales<\/td>\n<td>Orge en provenance d\u2019<strong>Haute-Loire<\/strong> (l\u2019un des plus gros d\u00e9partements producteurs d\u2019orge en France). <strong>Une partie de l&rsquo;orge est \u00e9galement cultiv\u00e9e aux abords de la distillerie.<\/strong><\/td>\n<\/tr>\n<tr>\n<td>Brassage \/<br \/>\nFermentation<\/td>\n<td>Le brassage et la fermentation sont faites manuellement \u00e0 la distillerie.<\/p>\n<p>La\u00a0Malterie du Ch\u00e2teau\u00a0fournit des levures sp\u00e9cialis\u00e9es pour le whisky et la fermentation est contr\u00f4l\u00e9e de fa\u00e7on \u00e0 produire un mo\u00fbt ayant une teneur plut\u00f4t faible en alcool\u00a0:<\/p>\n<blockquote><p>\u00ab Ceci permet de descendre relativement bas en distillation et de conserver le go\u00fbt du grain.\u00a0\u00bb B. M.<\/p><\/blockquote>\n<p>Le maltage est r\u00e9alis\u00e9 \u00e0 la Malterie du Ch\u00e2teau. La Malterie des Volcans fournit le malt tourb\u00e9 (20ppm).<\/td>\n<\/tr>\n<tr>\n<td>Alambics<\/td>\n<td>6 alambics\u00a0<em>Pot Still<\/em> de 300L \u00e0 repasse.<\/p>\n<p>Compos\u00e9s \u00e0 100% de cuivre martel\u00e9 \u00e0 la main, les alambics &#8211; fabrication sur mesure au Portugal &#8211; sont munis de cols de cygne tr\u00e8s courts. Ceci permet d\u2019obtenir un distillat plus gras.<\/p>\n<blockquote><p><em>\u00ab\u00a0Ces alambics produisent une tourbe l\u00e9g\u00e8re. On ne peut en effet exprimer toute la puissance de la tourbe avec ces derniers. Ils vont bien avec l\u2019utilisation des copeaux et ma m\u00e9thode de distillation basse o\u00f9 je cherche \u00e0 limiter les alcools agressifs\u2026 Faible part des anges oblige\u00a0!\u00a0\u00bb B. M.<\/em><\/p><\/blockquote>\n<\/td>\n<\/tr>\n<tr>\n<td>Distillation<\/td>\n<td><strong>Double distillation.<\/strong><\/p>\n<p>La premi\u00e8re passe permet d\u2019obtenir un bas-vin \u00e0 25% et la seconde un <em>new spirit<\/em> titrant +\/- 66% (apr\u00e8s \u00e9limination des t\u00eates et des queues bien entendu).<\/p>\n<p>Toujours dans l\u2019optique de se concentrer sur les ar\u00f4mes du grain, la distillerie pratique des coupes restreintes.<\/p>\n<blockquote><p><em>\u00ab\u00a0La distillation est notre plus grand savoir-faire. On cherche \u00e0 ce qu\u2019elle soit la plus artisanale et pr\u00e9cise possible. Les coupes se font \u00e0 l\u2019odorat. Les alambics sont d\u00e9munis de syst\u00e8me d\u2019automatisation. Je veux garder un volume artisanal.\u00a0\u00bb B. Il s\u2019agit de barriques retravaill\u00e9es qui avaient pr\u00e9alablement contenu du <\/span><strong style=\"font-family: inherit; font-size: inherit;\">vin du M\u00e9doc<\/strong><span style=\"font-family: inherit; font-size: inherit;\">.<\/span><\/li>\n<\/ul>\n<\/td>\n<\/tr>\n<tr>\n<td>Donn\u00e9es Territoriales<\/td>\n<td><strong>Climat<\/strong>\u00a0: chaud et
