ferme-brasserie\/distillerie.<\/figcaption><\/figure>\n<p>Seule et unique distillerie \u00e0 produire du en Normandie, la ferme-brasserie\/distillerie de la chapelle, alias <a href=\"https:\/\/whisky-francais.com\/index.php\/distilleries\/northmaen\/\">Northmaen<\/a>, nous ouvre ses portes pour une visite de ses installations, r\u00e9cit\u00a0:<\/p>\n<p>Apr\u00e8s quelques kilom\u00e8tres de route, entre pluie et soleil, nous sommes arriv\u00e9s dans une ferme typiquement normande. L\u00e9o, le patron de la distillerie, nous accueille alors chaleureusement. Le personnage, joyeux, distille de-ci de-l\u00e0 quelques blagues, nous parle de son attrait pour les jeux de mots et de sa prochaine bi\u00e8re qui sera fum\u00e9e et qu&rsquo;il appellera \u00ab\u00a0Jeanne d&rsquo;arc !\u00a0\u00bb Pas de doute, nous sommes bien en pr\u00e9sence de celui\u00a0qui a nomm\u00e9 son whisky \u00ab\u00a0<a href=\"https:\/\/whisky-francais.com\/index.php\/2017\/04\/27\/thor-boyo-42-northmaen\/\" target=\"blank\">Thor Boyo<\/a>\u00a0\u00bb !<\/p>\n<p>L&rsquo;exploitation est profond\u00e9ment ancr\u00e9e dans son terroir. En effet, la ferme-brasserie\/distillerie\u00a0s\u00e8me et r\u00e9colte sur ses terres \u00a0l&rsquo;int\u00e9gralit\u00e9 de l&rsquo;orge utilis\u00e9e dans la fabrication de ses bi\u00e8res et whiskies! Pour cela, 35ha jadis laiss\u00e9s en jach\u00e8re sont exploit\u00e9s. Seule l&rsquo;activit\u00e9 \u00ab\u00a0maltage\u00a0\u00bb est externalis\u00e9e (Stabroek). sec #1.<\/figcaption><\/figure>\n<p>Le premier que nous visitons est une ancienne cave \u00e0 fromage particuli\u00e8rement humide. Ici sont entrepos\u00e9s une trentaine d&rsquo;ex-f\u00fbts de vin de Bordeaux\u00a0contenant les futurs Thor boyo et\/ou Sleipnir. Le plafond du chai est parsem\u00e9 de moisissures blanches, h\u00e9ritage des fromages qui y \u00e9taient autrefois entrepos\u00e9s. L&rsquo;alcool, en s\u2019\u00e9vaporant, vient nourrir \u00e0 son tour des champignons noirs (les fameuses <em>torulas compniacensis<\/em>). Ces deux types de moisissures, blanches et noires, refusent cependant de cohabiter. Elles pr\u00e9f\u00e8rent mourir toutes les deux que de vivre c\u00f4te \u00e0 c\u00f4te ! Une trag\u00e9die fongique riche d&rsquo;enseignements !<\/p>\n<p>Le second chai est nettement plus sec, il abrite \u00e9galement les futurs <a href=\"https:\/\/whisky-francais.com\/index.php\/2017\/04\/27\/thor-boyo-42-northmaen\/\" target=\"blank\">Thor Boyo<\/a>. Au fond du Chai, un futur whisky, dont le nom reste \u00e0 trouver, sommeille dans des barriques d&rsquo;Acacia ayant pr\u00e9alablement contenue du Sauternes.<br \/>\nGr\u00e2ce \u00e0 un march\u00e9 du whisky en plein essor, et \u00e0 une demande allant jusqu&rsquo;au pays du soleil levant, Northmaen \u00e0 pr\u00e9vu de s&rsquo;agrandir! Un troisi\u00e8me chai d&rsquo;une contenance de 1300\u00a0f\u00fbts de 220L est actuellement en construction. Il permettra \u00e0 Northmaen de boxer dans la cat\u00e9gorie sup\u00e9rieure ! Nous noterons le travail remarquable de la distillerie dans cet exercice, celle-ci mobilisant ses propres effectifs dans l&rsquo;ach\u00e8vement de l&rsquo;\u00e9difice. L&rsquo;orge malt\u00e9 classique donnera naissance aux Thor Boyo et Sleipnirpendant que l&rsquo;orge fum\u00e9e au bois de h\u00eatre produira le dragon F\u00e1fnir (et Jeanne d&rsquo;arc, si vous suivez!). Nous d\u00e9couvrons \u00e0 ce moment une orge tr\u00e8s torr\u00e9fi\u00e9e utilis\u00e9e dans la confection de la Stout&#8230; L&rsquo;occasion pour L\u00e9o de nous raconter une anecdote. La stout trouverait son origine dans un incendie survenu \u00e0 Londres au XVIIe si\u00e8cle. L&rsquo;orge carbonis\u00e9e aurait tout de m\u00eame \u00e9t\u00e9 brass\u00e9e donnant naissance \u00e0 la fameuse bi\u00e8re noire. Il s&rsquo;agit probablement d&rsquo;une l\u00e9gende mais qui sait, il y a une part de v\u00e9rit\u00e9 derri\u00e8re toute histoire!<\/p>\n<p>Revenons en a notre visite ! Le malt observ\u00e9 sert donc de base \u00e0 la confection du whisky. L&rsquo;origine du whisky Northmaen remonte \u00e0 une bi\u00e8re pas assez mousseuse. Aujourd\u2019hui, le whisky constitue une activit\u00e9 \u00e0 part enti\u00e8re avec une partie de l&rsquo;orge malt\u00e9e qui lui est strictement r\u00e9serv\u00e9e !<\/p>\n<p>L&rsquo;alambic, un Armagnacais un peu particulier fonctionnant \u00e0 la vapeur, crache une eau-de-vie \u00e0 62\u00a0degr\u00e9s qui sera ensuite enf\u00fbt\u00e9e et plac\u00e9e dans les chais !
