On \u00e9change ensuite pour vous fournir une note la plus compl\u00e8te possible. Si le whisky fait g\u00e9n\u00e9ralement consensus, les ar\u00f4mes per\u00e7us d&rsquo;un verre \u00e0 l&rsquo;autre varient quelques fois de fa\u00e7on substantielle.<\/p>\n<p>Que ce soit par olfaction ou par r\u00e9tro olfaction (le fond de la bouche \u00e9tant reli\u00e9 au nez), la d\u00e9gustation s&rsquo;effectue \u00e0 80% gr\u00e2ce aux\u00a0r\u00e9cepteurs olfactifs plac\u00e9s dans les fosses nasales. Les cellules gustatives ne sont capable d&rsquo;identifier que 4 ou 5 saveurs&#8230; Au mieux! Parmi ces saveurs on compte le sucr\u00e9, le sal\u00e9, l&rsquo;acide, l&rsquo;amer et l&rsquo;umami.<\/p>\n<p>Arr\u00eatons nous sur cette cinqui\u00e8me saveur moins connue du grand public ! L&rsquo;umami est le fait de trois acides amin\u00e9s: glutamique, guanylique et inosinique, pr\u00e9sents dans de nombreux aliments et, entre autre, dans les algues kombu, les copeaux de bonite (cousine du thon) s\u00e9ch\u00e9e et les champignons shiitake. Ces trois ingr\u00e9dients se retrouvent dans le bouillon Dashi, un plat typique japonais qui a permis \u00e0 Kikunae Ikeda d&rsquo;identifier cette cinqui\u00e8me saveur. Le go\u00fbt\u00a0n\u2019est pas sucr\u00e9, acide, amer ou sal\u00e9, il est\u00a0<strong>\u3046\u307e\u5473<\/strong> ! Ainsi, plus de mol\u00e9cules odorantes parviendront aux r\u00e9cepteurs olfactifs situ\u00e9s dans les cavit\u00e9s nasales (= fosses nasales). Le premier, plut\u00f4t pertinent, c&rsquo;est que pour appr\u00e9cier la couleur d&rsquo;un whisky, il est plus pratique de ne pas avoir ses doigts devant. Le second argument s&rsquo;adresse aux puristes puisqu&rsquo;il s&rsquo;agit d\u2019\u00e9viter de r\u00e9chauffer le whisky en le faisant tourner dans sa main. De vous \u00e0 moi, si vous en \u00eates \u00e0 ce niveau de sensibilit\u00e9, il y a des d\u00e9bouch\u00e9s dans la brigade canine \ud83d\ude42<\/p>\n<p>Quoi qu&rsquo;il en soit, le verre a une influence non n\u00e9gligeable sur l&rsquo;exercice de d\u00e9gustation.
