Vieillissement en f\u00fbt de <strong>Banyuls*<\/strong>.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 143px;\">Couleur<\/td>\n<td style=\"width: 700px;\">Intense (cf photo), propre \u00e0 celle d\u2019un vieux Banyuls (tire vers le noir).<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 143px;\">Premier Nez<\/td>\n<td style=\"width: 700px;\">Sur la <strong>noix\u00a0<\/strong>!<br \/>\nDes notes de \u00ab\u00a0cordage humide\u00a0\u00bb se m\u00ealent au <strong>caract\u00e8re salin<\/strong>\u00a0du whisky.<br \/>\nL\u2019influence du Banyuls grandit \u00e0 mesure que les notes oxydatives et tanniques se d\u00e9voilent.<br \/>\nDe subtils ar\u00f4mes de <strong>f\u00e8ve de cacao<\/strong> ponctuent le 1er nez.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 143px;\">Second Nez<\/td>\n<td style=\"width: 700px;\">Le second nez est semblable \u00e0 celui d\u2019un <strong>vieux rhum de m\u00e9lasse<\/strong>\u00a0: sur les \u00e9pices douces (<strong>cannelle<\/strong>) et relev\u00e9es (<strong>poivre<\/strong>).<br \/>\nDes parfums de <strong>bois noble<\/strong> exaltent du verre.<br \/>\nLes ar\u00f4mes propres au<strong>\u00a0Banyuls vieilli <\/strong>(caf\u00e9, chocolat, cuir)<strong>\u00a0<\/strong>gagnent en profondeur.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 143px;\">Palais<\/td>\n<td style=\"width: 700px;\"><strong>L\u2019attaque<\/strong>: <strong>caramel br\u00fbl\u00e9<\/strong>, <strong>fruits noirs confits<\/strong>. La texture est dense (sucrosit\u00e9), le whisky tapisse le palais.<\/p>\n<p><strong>Milieu de bouche<\/strong>\u00a0: sur les <strong>fruits secs<\/strong> (noix de macadamia, <strong>raisins secs<\/strong>)! Une douceur lact\u00e9e (<strong>lait concentr\u00e9<\/strong>) temp\u00e8re le caract\u00e8re relev\u00e9 de\u00a0certains ar\u00f4mes (bois toast\u00e9, <strong>cr\u00e8me-br\u00fbl\u00e9e<\/strong>). Des notes de <strong>pruneaux \u00e0 l\u2019Armagnac<\/strong> et de\u00a0<strong>baba au rhum<\/strong> compl\u00e8tent la palette aromatique.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 143px;\">Finale<\/td>\n<td style=\"width: 700px;\">Les \u00e9pices\u00a0(<strong>poivre, vanille<\/strong>) et fruits secs (<strong>noisette<\/strong>) sont \u00e0 l\u2019honneur. Des notes lact\u00e9es (<strong>bonbon au lait<\/strong>) conf\u00e8rent un caract\u00e8re relativement <strong>doux<\/strong> \u00e0 l\u2019ensemble.<br \/>\nD\u2019une longueur mod\u00e9r\u00e9e, la d\u00e9gustation se cl\u00f4t sur des <strong>notes p\u00e2tissi\u00e8res<\/strong>.<\/td>\n<\/tr>\n<tr>\n<td style=\"width: 143px;\">Synth\u00e8se<\/td>\n<td style=\"width: 700px;\">Un whisky <strong>\u00e0 la crois\u00e9e des chemins avec le monde des vins doux naturels (VDN)<\/strong>. Les notes propres au Banyuls sont aussi pr\u00e9sentes au nez qu\u2019au palais (un anglophone parlerait de \u00ab\u00a0Banyuls bomb\u00a0!\u00bb)Cette \u00e9dition sp\u00e9ciale Zygoth\u00e8que constitue une introduction id\u00e9ale au Uberach X years after (note de d\u00e9gustation \u00e0 venir :D).<\/p>\n<p><strong>Un bien bel hommage<\/strong> \u00e0 l\u2019un des premiers restaurants parisiens \u00e0 avoir propos\u00e9 ce whisky!<\/p>\n<p>NB\u00a0: le verre vide r\u00e9v\u00e8le des parfums de chocolat aux reflets citronn\u00e9s\u00a0!<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>Cette d\u00e9gustation fait partie d&rsquo;une horizontale d&rsquo;Uberach d\u00e9gust\u00e9e \u00e0 la Zygoth\u00e8que ! \u00c0 tr\u00e8s bient\u00f4t pour la suite \ud83d\ude09<\/p>\n<p>* <strong>Banyuls<\/strong>: Vin Doux Naturel (<strong>VDN<\/strong>) dont l&rsquo;existence des vignobles, situ\u00e9s en bord de M\u00e9diterran\u00e9e (Roussillon),\u00a0remonte \u00e0 V si\u00e8cles av. J.C. Les principaux c\u00e9pages de l&rsquo;appellation sont le <strong>Grenache Noir, Gris et Blanc, le Carignan et le Macabeu<\/strong>.
