Con\u00e7u par \u00c9ric Cordelle, fondateur de la distillerie, cet appareil d&rsquo;une capacit\u00e9 de 50 hectolitres \u00e0 pour particularit\u00e9 de distiller \u00e0 seulement 50\u00b0C !<br \/>\nLe point d\u2019\u00e9bullition d&rsquo;un liquide d\u00e9pend de la temp\u00e9rature, mais \u00e9galement de la pression, pour distiller \u00e0 basse temp\u00e9rature, c&rsquo;est donc\u00a0sur les conditions de pression\u00a0que le ma\u00eetre distillateur va jouer.<\/p>\n<p>La cuisson des p\u00e2tes en montagne\u00a0est un bon cas pratique. La pression diminuant avec l&rsquo;altitude, l&rsquo;eau bout en dessous de 100\u00b0C. L&rsquo;alambic est r\u00e9alis\u00e9 en inox car une structure en cuivre ne r\u00e9sisterait pas \u00e0 la l&rsquo;\u00e9cart\u00a0de pression. en inox fait donc figure de wash still), la seconde distillation a lieu dans un alambic Charentais traditionnel en cuivre muni d&rsquo;un long serpentin.
