Si\u00e8cle.<\/figcaption><\/figure>\n<p>C&rsquo;est dans le nord de la France, \u00e0 Wambrechies, que nous avons remont\u00e9 le temps, lors de la visite de la <a href=\"https:\/\/whisky-francais.com\/index.php\/distilleries\/claeyssens\/\">distillerie Claeyssens <\/a>!<br \/>\nCette distillerie qui f\u00eate son bicentenaire cette ann\u00e9e, \u00e9tait initialement une huilerie, ouverte en 1789 avant d\u2019\u00eatre transform\u00e9e en distillerie en 1817. Depuis, Claeyssens a inlassablement continu\u00e9 \u00e0 produire du Geni\u00e8vre (du courage en bouteille pour les mineurs!) mais aussi du whisky depuis peu! Ce qui n&rsquo;est d&rsquo;ailleurs pas si diff\u00e9rent, \u00e9tant donn\u00e9 que le Geni\u00e8vre Claeyssens est aussi un alcool de grain. Retirez les baies de gen\u00e9vrier, mettez le tout en f\u00fbt pour au minimum trois ans et vous avez du whisky !<\/p>\n<p>Ce qui est le plus impressionnant lors de la visite de la distillerie c&rsquo;est que la plupart des machines n&rsquo;ont pas chang\u00e9 depuis un si\u00e8cle et demi. Comme la colonne est chauff\u00e9e \u00e0 sa base, elle est plus chaude en bas qu&rsquo;en haut (il y a une diff\u00e9rence de 15 \u00e0 20 degr\u00e9s entre les deux parties).<br \/>\n-Le mo\u00fbt est charg\u00e9 par le haut dans la cuve (1) appel\u00e9e \u00ab\u00a0chauffe vin.\u00a0\u00bb Ici la mati\u00e8re est pr\u00e9chauff\u00e9e gr\u00e2ce \u00e0 un serpentin qui traverse la cuve en acheminant les vapeurs d&rsquo;alcool.<br \/>\n-Le mo\u00fbt descend ensuite dans la colonne, les plateaux ralentissent la descente de la mati\u00e8re, permettant \u00e0 l&rsquo;alcool \u00e9thylique qui s\u2019\u00e9vapore d\u00e8s 78,75\u00b0c degr\u00e9s, de repartir en sens inverse sous forme de vapeur. Les \u00e9l\u00e9ments lourds (dont l&rsquo;eau!) continuent leur descente inexorable vers le bas de la colonne o\u00f9 ils seront \u00e9vacu\u00e9s tout au long du processus de distillation.<br \/>\n&#8211; Les vapeurs d&rsquo;alcool gagnent en puret\u00e9 car \u00e0 chaque plateaux elles sont contraintes par la forme de ces derniers \u00e0 se recondenser (fig2)<br \/>\n&#8211; Ce sont donc les \u00e9l\u00e9ments les plus l\u00e9gers qui arrivent en haut de la colonne puis sont achemin\u00e9s vers le chauffe-vin ou elles commencent \u00e0 se condenser. <strong>Le chauffe-vin, en jouant ce double r\u00f4le consistant d&rsquo;une part \u00e0 r\u00e9chauffer le mo\u00fbt et d&rsquo;autre part \u00e0 refroidir les vapeurs permet de r\u00e9aliser une \u00e9conomie d&rsquo;\u00e9nergie de temps et d&rsquo;eau !<\/strong><br \/>\n-Enfin, les vapeurs traversent le condenseur (3).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" data-attachment-id=\"2088\"
