C\u2019est un nom qui correspond parfaitement au projet. Aikan est un mariage entre deux climats bien s\u00fbrs, le climat temp\u00e9r\u00e9 europ\u00e9en et le climat tropical des Cara\u00efbes, mais \u00e9galement entre deux spiritueux, le rhum et le whisky !<\/p>\n<p>Les premiers f\u00fbts sont remplis en 2016 avec du whisky \u00e9cossais. Il s\u2019agit de f\u00fbts de rhum bien entendu, mais \u00e9galement de f\u00fbts neufs avec diff\u00e9rents profils de chauffe, de f\u00fbts de bourbon et d\u2019autres en exp\u00e9rimentation. Le distillat est compos\u00e9 pour partie de whisky de grain et de whisky de malt, les premiers f\u00fbts d\u2019Aikan sont donc techniquement des blends.<\/p>\n<p>Cette premi\u00e8re gamme a \u00e9t\u00e9 pens\u00e9e par Beno\u00eet pour s\u00e9duire de nouveaux consommateurs, et pourquoi pas des amateurs de rhum. En effet, si le whisky exprime bien des notes malt\u00e9es en bouche, au nez c\u2019est la Martinique qui se d\u00e9voile : \u201cAr\u00f4mes de fruits secs, de bois pr\u00e9cieux et de miel. Notes de rhums vieux et d\u2019\u00e9pices douces. Structure persistante et g\u00e9n\u00e9reuse\u201d \u00e9crit Christian Vergier, oenologue r\u00e9put\u00e9 pour son travail aupr\u00e8s de grandes maisons de rhum et de whiskies et \u00e9galement consultant du projet Aikan.<\/p>\n<p>Mais ce qui nous int\u00e9resse particuli\u00e8rement ici, c\u2019est la seconde gamme qui m\u00fbrit tranquillement dans les chais de JM.
