Cette polyvalence, pilier de l\u2019approche propos\u00e9e par la distillerie, s\u2019accompagne d\u2019un travail \u00e0 la main du brassage \u00e0 la mise en bouteille.<\/p>\n<p>Le concept de vin de garage d\u00e9sormais d\u00e9mocratis\u00e9, celui de <em><strong>whisky de garage<\/strong><\/em>&nbsp;pourrait-il le devenir soutenu par ce type d\u2019initiative&nbsp;? J\u2019ai donc d\u00e9but\u00e9 l\u2019activit\u00e9 en cr\u00e9ant simultan\u00e9ment une micro-brasserie et une distillerie en 2015.&nbsp;\u00bb Yann Charlier.<\/p><\/blockquote>\n<p><strong>Mai 2020&nbsp;<\/strong>: commercialisation du 1<sup>er<\/sup> whisky Ardennais.<\/p>\n<blockquote><p>\u00ab 2020&nbsp;sera une ann\u00e9e test o\u00f9 nous d\u00e9ciderons en famille de notre strat\u00e9gie de d\u00e9veloppement. \u00c0 ce jour 42 bouteilles sur les 50 mises en vente (tarif non d\u00e9fini pour l\u2019instant) sont d\u00e9j\u00e0 r\u00e9serv\u00e9es. C.<\/p><\/blockquote>\n<\/td>\n<\/tr>\n<tr>\n<td>Personnages<br>\nCl\u00e9s<\/td>\n<td><strong>Yann Charlier<\/strong>&nbsp;: fondateur de la micro-brasserie et distillerie.<p><\/p>\n<p>De formation agricole\/agronome et dipl\u00f4m\u00e9 du CNAM , Yann C. travaille comme inspecteur aux services sant\u00e9 protection animale environnement et s\u00e9curit\u00e9 sanitaire de l\u2019alimentation. Son travail \u00e0 la distillerie a cours durant son temps libre.<\/p>\n<p><strong>La famille Charlier&nbsp;<\/strong>: soutient et accompagne Yann dans le d\u00e9veloppement de la micro brasserie-distillerie.<\/p>\n<blockquote><p>\u00ab&nbsp;Nous avons d\u00e9marr\u00e9 l\u2019activit\u00e9 dans la propri\u00e9t\u00e9 familiale, \u00e0 la villa Quinard &#8211; pr\u00e8s de <a href=\"http:\/\/www.charleville-mezieres.fr\/\" target=\"_blank\" rel=\"noopener noreferrer\">Charleville-M\u00e9zi\u00e8res<\/a> &#8211; en hommage \u00e0 ces anciens brasseurs. \u00bb Y. Une faible quantit\u00e9 est d\u2019origine Champenoise. Nous essayons de <strong>travailler au maximum en circuit court<\/strong>, la principale difficult\u00e9 concernant la r\u00e9gularit\u00e9 des approvisionnements malgr\u00e9 que nous soyons au sein de la plus grande r\u00e9gion productrice d\u2019orge en France. M\u00eame les Japonais utilisent nos malts !&nbsp;\u00bb Y. Nous avons r\u00e9cemment investi dans une installation de 5hl.&nbsp;La fermentation a lieu avec notre propre souche de levure. \u00bb Y. C.<\/p><\/blockquote>\n<\/td>\n<\/tr>\n<tr>\n<td>Alambic<\/td>\n<td><strong>Un alambic de 120L<\/strong> double paroi cuivre\/inox (bain marie) en provenance de R\u00e9publique Tch\u00e8que. Possibilit\u00e9 de chauffer au bois, au gaz et \u00e0 l\u2019\u00e9lectricit\u00e9.<strong>Projet:<\/strong><p><\/p>\n<blockquote><p>\u00ab&nbsp;Nous sommes actuellement \u00e0 la recherche d\u2019un alambic \u00e0 colonne en cuivre d\u2019une capacit\u00e9 comprise en 6 et 11hl, en neuf comme en occasion.&nbsp;\u00bb Y. Un puits se situe au milieu de la cave.<\/td>\n<\/tr>\n<tr>\n<td>F\u00fbts &amp;<br>\nVieillissement<\/td>\n<td>\n<blockquote><p>\u00ab&nbsp;<strong>Trouver des f\u00fbts<\/strong> ayant contenu ce que l\u2019on souhaite dans des <strong>dimensions allant de 56 \u00e0 112L<\/strong> constitue un v\u00e9ritable d\u00e9fi. Notre travail, r\u00e9alis\u00e9 en partie avec la <a href=\"https:\/\/www.francoisfreres.com\/fr\/\" target=\"_blank\" rel=\"noopener noreferrer\">tonnellerie <strong>Fran\u00e7ois Fr\u00e8res<\/strong><\/a>, nous apporte en ce sens puisqu\u2019elle nous aide \u00e0 trouver le type de barrique recherch\u00e9.&nbsp;\u00bb Y. C.<\/p><\/blockquote>\n<p>\u00c0 propos du vieillissement en f\u00fbts de 56 \u00e0 112L&#8230;<\/p>\n<blockquote><p>\u00ab&nbsp;Le vieillissement est acc\u00e9l\u00e9r\u00e9 lorsqu\u2019il est conduit en f\u00fbt de moindre contenance. La puissance aromatique et le changement de couleur apparaissent rapidement. \u00bb Y. C.<\/p><\/blockquote>\n<p>Sur le style et l&rsquo;identit\u00e9 du futur whisky&#8230;<\/p>\n<blockquote><p><strong>Nous entonnons chaque ann\u00e9e dans un type de f\u00fbt diff\u00e9rent<\/strong>. L\u2019\u00e9levage en barriques de ch\u00eane fran\u00e7ais est privil\u00e9gi\u00e9. <strong>Notre volont\u00e9 est de cr\u00e9er un whisky bois\u00e9 et l\u00e9g\u00e8rement tourb\u00e9. Petit-fils de paysan, j\u2019aimerais que ce whisky soit le reflet des Ardennes ; terre de labeur, de for\u00eats et de l\u00e9gendes, de sols profonds et argileux, de ses lacs, \u00e9tangs, sources et cours d\u2019eaux. <\/strong>\u00bb Y. C.<\/p><\/blockquote>\n<\/td>\n<\/tr>\n<tr>\n<td>Donn\u00e9es Territoriales<\/td>\n<td><strong>Climat<\/strong>&nbsp;: Continental d\u00e9grad\u00e9<p><\/p>\n<p><strong>Altitude<\/strong>&nbsp;: 144m<\/p><\/td>\n<\/tr>\n<tr>\n<td>Le Saviez-Vous ?<\/td>\n<td>Le respect et la pr\u00e9servation de l\u2019environnement sont au c\u0153ur de la d\u00e9marche de la famille Charlier&nbsp;:<p><\/p>\n<blockquote><p>\u00ab&nbsp;Notre micro brasserie-distillerie est r\u00e9solument <strong>tourn\u00e9e vers le d\u00e9veloppement durable<\/strong>. Les rejets sont trait\u00e9s sur place avant d\u2019\u00eatre compost\u00e9s. Les dr\u00eaches servent \u00e0 l&rsquo;alimentation d\u2019un \u00e0 deux bovins\/an. Le persill\u00e9 est tr\u00e8s fin, les qualit\u00e9s organoleptiques sont d\u00e9cupl\u00e9es. La fibre musculaire est fine et dense. Le peu de perte en cuisson permet de braiser id\u00e9alement la viande.&nbsp;Cette initiative s\u2019inscrit dans une <strong>logique d\u2019autosuffisance<\/strong>. Elle favorise les circuits courts et repr\u00e9sente un v\u00e9ritable clin d\u2019\u0153il au travail des a\u00efeux. \u00bb Y. C.<\/p><\/blockquote>\n<p>La production de whisky en Ardennes, fruit d&rsquo;un h\u00e9ritage celtique ?<\/p>\n<blockquote><p>\u00ab&nbsp;L\u2019Ardennais a, on l\u2019oubli trop souvent une identit\u00e9 unique en Europe et des origines celtiques.&nbsp;\u00bb Y. C.<\/p><\/blockquote>\n<p>Une fleur de bi\u00e8re artisanale 40 \u00b0 vieillie 1 an en f\u00fbt de ch\u00eane est propos\u00e9e \u00e0 la vente en attendant la sortie du whisky.<\/p>\n<p>Les Ardennes s\u2019engagent dans la pr\u00e9servation des nombreuses tourbi\u00e8res diss\u00e9min\u00e9es sur son territoire. Les sites, class\u00e9s Natura 2000, se situent essentiellement dans le Nord du d\u00e9partement.<\/p>\n<p>Il est difficile d\u2019utiliser les ch\u00eanes locaux comme mati\u00e8re premi\u00e8re dans la confection de tonneaux.
