C\u2019est \u00e0 travers cette activit\u00e9 que la distillerie redonne vie \u00e0 un site o\u00f9 s\u2019activaient jadis des centaines de mineurs en qu\u00eate d\u2019\u00e9tain\u00a0! K.<\/p><\/blockquote>\n<p><strong>\u00c9ric Ollive<\/strong>\u00a0: associ\u00e9, responsable de production brasserie et sans alcool.<\/td>\n<\/tr>\n<tr>\n<td>Gamme<\/td>\n<td>\n<blockquote><p>\u00ab <strong>Nous avons fait le choix de commercialiser un spiritueux qui aura directement l\u2019appellation whisky<\/strong>. Les premi\u00e8res bouteilles auront \u00e0 minima 3 ans. Leur palette gustative, inspir\u00e9e par celles de nos wash et bi\u00e8res, fera la part belle aux ar\u00f4mes fruit\u00e9s et floraux dans un respect d\u2019\u00e9quilibre et de subtilit\u00e9.\u00a0\u00bb S. K.<\/p><\/blockquote>\n<p>Le futur whisky de la distillerie portera le nom de <strong>Galaad<\/strong>.<\/p>\n<blockquote><p>\u00ab\u00a0Galaad\u00a0est un des chevaliers de la Table ronde. Fils de Lancelot, il est le seul chevalier qui puisse s\u2019asseoir \u00e0 la droite du roi Arthur. Il aurait d\u00e9couvert le Graal.\u00a0\u00bb S. Sa mise en place est pr\u00e9vue pour fin 2019. Nous serons alors en mesure de fournir \u00e0 la fois la brasserie, la distillerie et d\u2019autres producteurs.\u00a0\u00bb S. K.<\/p><\/blockquote>\n<\/td>\n<\/tr>\n<tr>\n<td>Levures<\/td>\n<td>\n<blockquote><p>\u00ab\u00a0<strong>Nous \u00e9laborons et utilisons nos propres souches de levures<\/strong>, en partenariat avec l\u2019universit\u00e9 de Louvain en Belgique. <strong>Ce sont ces levures qui constituent le trait d\u2019union entre la brasserie et la distillerie.<\/strong> Nous utilisons en cela la m\u00eame souche pour la fabrication du whisky que pour celle d\u2019une de nos bi\u00e8res. <strong>Le wash constitue notre v\u00e9ritable signature, en amont de la distillation.<\/strong>\u00a0\u00bb S. Ce proc\u00e9d\u00e9 nous permet de consacrer davantage de temps \u00e0 l\u2019\u00e9levage et \u00e0 l\u2019assemblage des distillats. Notre travail sur le suivi des vieillissements se fait en partenariat avec la <a href=\"https:\/\/www.taransaud.com\/\" target=\"_blank\" rel=\"noopener\">tonnellerie Taransaud<\/a> qui nous fournit en barriques neuves.\u00a0\u00bb S.
