A. \u00ab\u00a0Je suis entrepreneur dans plusieurs domaines, dont le whisky, dans lequel je me suis sp\u00e9cialis\u00e9. Mon travail dans l\u2019univers des spiritueux a d\u00e9but\u00e9 il y a 12 ans, \u00e0 la suite d\u2019une licence en sciences m\u00e9caniques (Toulouse) et d\u2019un master en management international (Pays de Galle). \u00a0Apr\u00e8s une carri\u00e8re dans le groupe Pernod-Ricard, j\u2019ai fond\u00e9 plusieurs entreprises dont The Single Cask Pte Ltd \u00e0 Singapour. J\u2019exerce \u00e9galement en tant que consultant whisky et F&amp;B o\u00f9 j\u2019accompagne des entrepreneurs dans de nouveaux projets. Je travaille sur des projets entre le Royaume-uni, la France, l\u2019Asie et l\u2019Australie. \u00bb<\/p><\/blockquote>\n<ul>\n<li><strong>Pourquoi ce voyage ?<\/strong><\/li>\n<\/ul>\n<blockquote><p>F. A. \u00ab\u00a0<strong>On entend assez peu parler du whisky Fran\u00e7ais \u00e0 l\u2019\u00e9tranger<\/strong>, ou de seulement certaines distilleries telles <a href=\"https:\/\/whisky-francais.com\/index.php\/distilleries\/glann-ar-mor\/\">Glann Ar Mor<\/a>, <a href=\"https:\/\/whisky-francais.com\/index.php\/distilleries\/warenghem\/\">Warenghem<\/a> ou du <a href=\"https:\/\/whisky-francais.com\/index.php\/distilleries\/dmg\/\">Domaine des Hautes Glaces<\/a>. Il a fallu attendre 2017 pour que la communication autour de ces spiritueux s\u2019intensifie. <strong>Il s\u2019agit d\u2019un territoire nouveau, digne d\u2019int\u00e9r\u00eat et autour duquel un mini buzz s\u2019est cr\u00e9\u00e9<\/strong>. Bien que travaillant dans le whisky et de nationalit\u00e9 fran\u00e7aise, je ne connaissais pas suffisamment cet univers. <strong>Le but de ce voyage f\u00fbt donc de rencontrer les personnalit\u00e9s d\u2019aujourd\u2019hui qui font le whisky fran\u00e7ais de demain\u00a0!<\/strong> Il s\u2019agissait par la m\u00eame occasion de dresser un panorama actualis\u00e9 de la production de whisky en France.\u00a0\u00bb<\/p><\/blockquote>\n<ul>\n<li><strong>Comment t&rsquo;es tu organis\u00e9 ?<\/strong><\/li>\n<\/ul>\n<blockquote><p>F. A. \u00ab\u00a0Je savais que je disposais d\u2019une fen\u00eatre de 3 semaines \u00e0 partir de fin F\u00e9vrier. J\u2019ai contact\u00e9 les distilleries une \u00e0 une et dress\u00e9 le plan de route depuis Londres et Singapour. L\u2019objectif \u00e9tait de visiter deux distilleries par jour sachant qu\u2019une journ\u00e9e par semaine \u00e9tait consacr\u00e9e au repos et \u00e0 la r\u00e9daction des notes.\u00a0\u00bb<\/p><\/blockquote>\n<ul>\n<li><strong>Combien de distilleries as-tu visit\u00e9 ?<\/strong><\/li>\n<\/ul>\n<blockquote><p>F. regard portais-tu sur le whisky fran\u00e7ais avant ton voyage ?<\/strong><\/li>\n<\/ul>\n<blockquote><p>F. A. \u00ab\u00a0Je percevais un message \u00e0 la fois humble et juste de la part de ses acteurs. Savoir-faire ancestraux, h\u00e9ritage et faible capacit\u00e9 de production teintaient cette impression.\u00a0\u00bb<\/p><\/blockquote>\n<ul>\n<li><strong>Quel regard portes-tu d\u00e9sormais ?<\/strong><\/li>\n<\/ul>\n<blockquote><p>F. A. \u00ab\u00a0<strong>J\u2019ai d\u2019abord constat\u00e9 que de nouveaux distillateurs font de l\u2019excellent travail avec peu de formation ou sans avoir h\u00e9rit\u00e9 du mat\u00e9riel et\/ou des mati\u00e8res premi\u00e8res n\u00e9cessaires \u00e0 la confection du whisky<\/strong>.<\/p>\n<p>C\u2019est un <strong>secteur \u00e0 plusieurs vitesses<\/strong> o\u00f9 les productions d\u2019amateurs \u00e9clair\u00e9s c\u00f4toient celles de producteurs industriels. Les choix strat\u00e9giques et op\u00e9rationnels d\u00e9cid\u00e9s par ces entrepreneurs prennent tout leur sens \u00e0 la lumi\u00e8re de leurs profils.<\/p>\n<p><strong>Tous ne contr\u00f4lent pas toutes les \u00e9tapes de la production &#8211; notamment le maltage &#8211; mais disposent d\u2019une connaissance technique tr\u00e8s approfondie de leur domaine d\u2019activit\u00e9<\/strong>. J\u2019aimerais que toutes les \u00e9tapes de la production soient r\u00e9alis\u00e9es en France, pourquoi pas sur site, mais il convient avant tout de laisser aux producteurs le soin de d\u00e9terminer ce que sera le whisky fran\u00e7ais de demain. \u00c0 ce titre, <strong>j\u2019attends de voir avec impatience les solutions de maltage \u00e0 fa\u00e7on prochainement propos\u00e9es par l\u2019une de ces distilleries en France<\/strong>.<\/p>\n<p>Si mon regard a toujours \u00e9t\u00e9 bienveillant envers le whisky de France, il est aujourd\u2019hui emprunt d\u2019un <strong>profond respect pour ses producteurs<\/strong>. Qu\u2019ils aient investi des millions, ou d\u00e9but\u00e9 avec un budget serr\u00e9. Je tire mon chapeau \u00e0 tous ceux qui travaillent tr\u00e8s t\u00f4t le matin jusqu\u2019\u00e0 tard le soir, et parfois m\u00eame seuls dans leur distillerie.<\/p>\n<p><strong>Au final, partir sur la route des distilleries, c\u2019est d\u00e9couvrir bien plus\u00a0que le whisky fran\u00e7ais<\/strong>. Je me suis rendu compte que je connaissais assez mal la France avant de d\u00e9buter cette aventure. La d\u00e9couverte des traditions, de l\u2019histoire, de la gastronomie et des cultures r\u00e9gionales a rythm\u00e9 ce voyage. <strong>La diversit\u00e9 des patrimoines est saisissante<\/strong>.\u00a0\u00bb<\/p><\/blockquote>\n<ul>\n<li><strong>Selon toi, quelles sont les forces et les faiblesses des producteurs fran\u00e7ais par rapport \u00e0 ceux d\u2019autres pays ?<\/strong><\/li>\n<\/ul>\n<blockquote><p>F. A.\u00a0\u00ab\u00a0<strong>Face aux g\u00e9ants du march\u00e9, la faible capacit\u00e9 de production et le rapport qualit\u00e9\/prix constituent encore une faiblesse dans de nombreux cas<\/strong>. Il y a trop souvent un d\u00e9crochage entre le nombre d\u2019ann\u00e9es de vieillissement des whiskies et leurs tarifications. Lorsque je tombe sur un whisky fran\u00e7ais dont le prix est 2 fois sup\u00e9rieur pour un vieillissement 4 \u00e0 5 fois inf\u00e9rieur \u00e0 celui d\u2019un whisky d\u2019une distillerie \u00e9trang\u00e8re renomm\u00e9e, je me pose des questions quant \u00e0 la compr\u00e9hension de ce d\u00e9calage par le consommateur.<\/p>\n<p>Pour moi, <strong>les forces principales du whisky fran\u00e7ais sont la passion, le savoir-faire, la cr\u00e9ativit\u00e9, et la diversit\u00e9<\/strong>.<\/p>\n<p>Il y a tout d\u2019abord une <strong>v\u00e9ritable passion<\/strong> qui nous d\u00e9marque de l\u2019international et qui se retrouve chez tous les acteurs du whisky de France qu\u2019ils soient producteurs, distributeurs ou consommateurs.<\/p>\n<p>Sur le papier, <strong>la France est un des pays les plus l\u00e9gitimes \u00e0 la production de whisky<\/strong>, avec un savoir-faire en agriculture, maltage, brassage, distillation (eaux-de-vies de fruits, calvados, geni\u00e8vre, lambig\u2026), \u00e9levage sous bois (vin, armagnac,\u2026), ou assemblage d\u2019eaux de vies (cognac,\u2026).<\/p>\n<p><strong>La cr\u00e9ativit\u00e9 et l\u2019inventivit\u00e9 des producteurs au service du qualitatif et de la typicit\u00e9 du go\u00fbt sont une richesse incroyable<\/strong>. Quasiment tous les producteurs m\u2019ont dit\u00a0: \u00ab\u00a0je veux faire un whisky diff\u00e9rent. Je veux qu\u2019il soit emprunt de ma r\u00e9gion, de ce que j\u2019ai \u00e0 l\u2019esprit.\u00a0\u00bb Avec cette d\u00e9marche, nous allons au del\u00e0 de la satisfaction de produire un whisky standard. Que ce soit \u00e0 la Distillerie des Bughes, \u00e0 la distillerie du Vercors, \u00e0 la Distillerie de Paris, ou d\u2019autres encore, <strong>des tr\u00e9sors d\u2019inventivit\u00e9 et d\u2019ing\u00e9niosit\u00e9 sont d\u00e9ploy\u00e9s pour proposer des alcools aux caract\u00e9ristiques uniques<\/strong>. C\u2019est une volont\u00e9 d\u2019innover que je ne connais nulle part ailleurs au monde.<\/p>\n<p>La diversit\u00e9 peut \u00eatre \u00e0 la fois une force et une faiblesse. <strong>Comment r\u00e9unir l\u2019ensemble de ces whiskies sous une m\u00eame banni\u00e8re\u00a0? Comment f\u00e9d\u00e9rer ses acteurs\u00a0autour d\u2019une vision commune quand tous ne font pas face aux m\u00eames enjeux ?<\/strong> L\u00e0 est tout le d\u00e9fi, qui revient en partie \u00e0 la <strong>F\u00e9d\u00e9ration du Whisky de France<\/strong>, qui a fort \u00e0 faire\u2026!<\/p>\n<p>Je vois \u00e9galement la jeunesse de cette industrie comme une force. Nous n\u2019en sommes qu\u2019aux balbutiements, tout reste \u00e0 construire. Un avenir radieux attend le whisky de France. Nous avons cette capacit\u00e9 \u00e0 \u00e9crire de grandes et belles histoires. Ce sera le cas pour ce whisky apr\u00e8s une p\u00e9riode d\u2019ajustement n\u00e9cessaire. <strong>Il y aura un \u00e2ge d\u2019or, je suis
