La fermentation est particuli\u00e8rement longue puisqu&rsquo;elle s\u2019\u00e9tend sur plus de deux semaines ! ( \u00c0 titre de comparaison, la dur\u00e9e de fermentation pratiqu\u00e9e en \u00c9cosse est de deux jours.). Le mo\u00fbt est ensuite distill\u00e9 dans le fameux HOLSTEIN de la distillerie.<\/p>\n\n\n\n<p>Le whisky a ensuite connu un grand nombre de f\u00fbts de cent litres; huit d&rsquo;entre eux \u00e9taient neufs. Les autres sont des f\u00fbts&nbsp;ayant \u00e9t\u00e9&nbsp;l\u00e9g\u00e8rement \u00e9puis\u00e9 par de l&rsquo;eau-de-vie de malt <em>\u00ab\u00a0des f\u00fbt d&rsquo;ex-rien\u00a0\u00bb<\/em> comme le dit Nicolas.  <br>La totalit\u00e9 des barriques \u00e9taient&nbsp;en ch\u00eane \u00e0 l&rsquo;exception de quelques fonds (Acacia, ou merisier) et de la derni\u00e8re barrique qui \u00e9tait&nbsp;en ch\u00e2taignier. <\/p>\n\n\n\n<p>Un gros travail a \u00e9galement&nbsp;\u00e9t\u00e9&nbsp;r\u00e9alis\u00e9&nbsp;sur les profils de chauffe, pas \u00e9tonnant de la part de la tonnellerie qui d\u00e8s 1989 a identifi\u00e9 scientifiquement les substances issues de la chauffe. <\/p>\n\n\n\n<p>Au final, rien n&rsquo;a \u00e9t\u00e9 laiss\u00e9 au hasard, le Whisky de paris a \u00e9t\u00e9 con\u00e7u <em>\u00ab\u00a0comme un parfum ou une voiture de course\u00a0\u00bb<\/em> explique Nicolas Julh\u00e8s.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img Alc.vol, le whisky pr\u00e9sente une belle robe ambr\u00e9.<\/p>\n\n\n\n<p><strong>Au nez :<\/strong>  Inattendu et tr\u00e8s riche ! Les c\u00e9r\u00e9ales sont bien pr\u00e9sentes, le malt fum\u00e9 se traduit par des parfums de papier d\u2019Arm\u00e9nie, de fourrure et de cirage.  <br>Des notes de p\u00e2te de fruits \u00e0 l&rsquo;orange et de tarte Tatin s&rsquo;effacent au profit d&rsquo;une pointe citronn\u00e9e. <br>Le nez est aussi tr\u00e8s frais et herbac\u00e9 (Camphre, eucalyptus). Une pointe de poivre noir vient relever l&rsquo;ensemble.<\/p>\n\n\n\n<p><strong>Au palais : <\/strong> La texture reste \u00e9paisse malgr\u00e9 la r\u00e9duction.  <br>Le palais est en coh\u00e9rence avec le nez. Les diff\u00e9rents ar\u00f4mes se succ\u00e8dent tr\u00e8s rapidement. Les herbes aromatiques (cumin, Romarin, gingembre) s&rsquo;orientent vers les agrumes (c\u00e9drat) avant de se tourner vers du foin fra\u00eechement coup\u00e9.<\/p>\n\n\n\n<p><strong>Final :<\/strong> Les herbes de Provence (romarin), les \u00e9pices (poivre toujours) durent de longue minutes.<\/p>\n\n\n\n<p><strong>Conclusion : <\/strong>Un whisky tr\u00e8s diff\u00e9rent. \u00c9tonnamment frais et complexe. Le bois neuf est particuli\u00e8rement discret laissant la place \u00e0 un foisonnement d&rsquo;ar\u00f4mes.
