Depuis leur premier whisky a vu le jour et il m\u00e9rite largement qu&rsquo;on s&rsquo;y attarde un instant !<\/p>\n<p>D\u2019une part, parce que c\u2019est le premier whisky champenois mais surtout parce que c\u2019est un produit d\u2019une richesse et d\u2019une complexit\u00e9 \u00e9tonnantes. Il faut dire, qu\u2019<a href=\"https:\/\/whisky-francais.com\/index.php\/2017\/10\/06\/esprit-de-malt-45-moutard-diligent\/\">a six mois d\u00e9j\u00e0, le distillat de la distillerie<\/a>\u00a0avait attir\u00e9 notre au <a href=\"https:\/\/whisky-francais.com\/index.php\/2017\/08\/21\/trois-questions-a-philippe-juge-instigateur-du-salon-france-quintessence\/\">salon quintessence de 2017<\/a> !<\/p>\n<p><em>Brassage<\/em><\/p>\n<p>Pour ce premier Whisky, Alexandre Moutard est parti d\u2019un mo\u00fbt de la brasserie Larcher. Situ\u00e9 \u00e0 sens en Bourgogne et partenaires de la premi\u00e8re heure de la distillerie, la brasserie fournit un mo\u00fbt de malt Pilsen fortement concentr\u00e9 en sucres fermentescibles. Un brassage multipalier traditionnel dans la fabrication des bi\u00e8res blondes et une filtration gravitaire assure un mo\u00fbt d\u2019une tr\u00e8s grande qualit\u00e9.<\/p>\n<p><em>Fermentation<\/em><\/p>\n<p>Pour la fermentation, Alexandre utilise alors des levures Champenoises de type <em>Saccharomyces Cerevisiae<\/em> qui vont mettre jusqu\u2019\u00e0 cinq jours pour convertir les sucres du brassin en alcool.\u00a0 Pour comparaison, une fermentation en \u00c9cosse exc\u00e8de rarement les 2 jours. Viennent ensuite trois alambics de seconde passe de deux \u00e0 trois hectolitres. Ils sont l\u2019\u00e9quivalent des \u00ab Spirit still \u00bb \u00c9cossais.<\/p>\n<p>Le distillat ainsi obtenu titre 64,9%, il sera enf\u00fbt\u00e9 tel quel.<\/p>\n<p>L\u00e0 aussi il est int\u00e9ressant de se comparer pour comprendre \u00e0 quel point les productions fran\u00e7aises peuvent \u00eatre artisanales. Une \u00ab petite \u00bb distillerie \u00c9cossaise comme Edradour utilise un spirit still de 22 hectolitres, c\u2019est-\u00e0-dire, 10 fois plus grand que ceux install\u00e9 \u00e0 la distillerie Moutard.<\/p>\n<p><em>Vieillissement<\/em><\/p>\n<p>Enfin, pour le vieillissement l\u2019eau-de-vie est conserv\u00e9e pendant 3 ans dans des f\u00fbts de ratafia champenois eux-m\u00eames entrepos\u00e9s dans une Cave traditionnelle de Champagne (calcaire dur du kimm\u00e9ridgien).<\/p>\n<p>Avant la mise en bouteille le whisky est r\u00e9duit \u00e0 45% et n\u2019est bien entendu pas filtr\u00e9 \u00e0 froid.
