Pour distiller \u00e0 basse temp\u00e9rature (50\u00b0C), l\u2019alambic est mis sous basse pression ce qui permet la vaporisation de l\u2019alcool bien avant les 78,4\u00b0c n\u00e9cessaire en condition normal de pression (voir <a href=\"https:\/\/whisky-francais.com\/index.php\/2017\/06\/22\/letonnant-wash-still-de-la-distillerie-du-vercors\/\">L&rsquo;\u00e9tonnant Wash Still de la distillerie du Vercors<\/a>\u00a0 pour plus de d\u00e9tails). <br \/>L\u2019alambic de gauche est un alambic charentais avec un condenseur \u00e0 serpentin, il fait office de \u00ab Spirit still \u00bb, c\u2019est-\u00e0-dire pour la seconde distillation. Il s\u2019agit principalement d\u2019orges fran\u00e7aises et m\u00eame Dr\u00f4moises quand c\u2019est possible mais le travail en bio contraint parfois \u00e0 s\u00e9lectionner de l\u2019orge au-del\u00e0 des fronti\u00e8res, notamment car cette agriculture est beaucoup plus d\u00e9pendante des conditions climatiques et que certaines ann\u00e9es peuvent \u00eatre tr\u00e8s mauvaises.<\/p>\n<blockquote>\n<p>Vu les pluies actuelles et l&rsquo;impossibilit\u00e9 de moissonner, on peut se demander si 2021 ne sera pas justement une ann\u00e9e \u00e0 probl\u00e8mes pour l&rsquo;orge Bio.<\/p>\n<p style=\"text-align: right;\">\u00c9ric Cordelle<\/p>\n<\/blockquote>\n<p>La tourbe, elle, vient d&rsquo;\u00c9cosse. Apr\u00e8s plusieurs essaie, c\u2019est cette derni\u00e8re qui a le plus convaincu en distillation \u00e0 basse temp\u00e9rature. Cette technique permet d\u2019obtenir des alcools tr\u00e8s gras et tr\u00e8s aromatiques (pas de colonne de distillation), et \u00e9galement, de s\u00e9lectionner des ar\u00f4mes d\u00e9licats, floraux et fruit\u00e9s gr\u00e2ce \u00e0 la basse temp\u00e9rature.<\/p>\n<p>Distiller du malt tourb\u00e9 avec cette m\u00e9thode \u00e9tait donc audacieux car, g\u00e9n\u00e9ralement, un brassin a 35 PPM en pot still produit plut\u00f4t des saveurs intenses avec des ar\u00f4mes prononc\u00e9s. Ici, Nautilus agit sur la s\u00e9lection des ph\u00e9nols de fa\u00e7on \u00e0 restituer une tourbe fra\u00eeche, min\u00e9rale, presque a\u00e9rienne.<\/p>\n<blockquote>\n<p>Le r\u00e9sultat de la distillation est tr\u00e8s diff\u00e9rent, on est vraiment sur le c\u00f4t\u00e9 fum\u00e9 par opposition aux cot\u00e9s terreux ou goudronn\u00e9s que l&rsquo;on peut retrouver dans d&rsquo;autres whiskies tourb\u00e9s.<\/p>\n<p style=\"text-align: right;\">\u00c9ric Cordelle<\/p>\n<\/blockquote>\n<p>On sait que la d\u00e9gustation est un exercice \u00e9minemment subjectif, aussi, afin de varier les d\u00e9gustateurs sur whisky-francais.com, nous avons demand\u00e9 \u00e0 Salvatore Mannino, responsable du salon du Golden Promise whisky Bar \u00e0 Paris de conclure ce papier par une d\u00e9gustation<\/p>\n<blockquote>\n<p>COULEUR : Paille<\/p>\n<p>NEZ : D\u2019une belle fra\u00eecheur, sur les fruits blancs (coing, brugnon). Herbac\u00e9 (herbe s\u00e8che et b\u00e2ton de r\u00e9glisse, qui annonce la tourbe, plut\u00f4t mesur\u00e9e). Des agrumes (citron vert) lui apporte une note acidul\u00e9e. Une pinc\u00e9e de cannelle.<\/p>\n<p>BOUCHE : Ample et grasse. La tourbe ouvre le d\u00e9bat, puis on retrouve le citron vert sous forme de sorbet et zestes, des \u00e9pices (gentiane, poivre vert, piment) : le palais en ressort vivifi\u00e9. Des notes de malt vert apportent une belle douceur en contrepoint.<\/p>\n<p>FINALE : Longue, \u00e9pic\u00e9e (poivre vert) et malt\u00e9e.
