Est-ce d\u00fb \u00e0 la premiumisation de l\u2019offre qui voit les singles malt supplanter les blend dans les ann\u00e9es 80 et 90 ? ou bien l\u2019arriv\u00e9e du whisky coca \u00e0 la m\u00eame \u00e9poque ? Difficile \u00e0 dire !<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pire, m\u00eame l\u2019ajout d\u2019un trait d\u2019eau dans son whisky est aujourd&rsquo;hui vu d\u2019un \u0153il suspicieux. Et pourtant, \u00e0 moins de ne boire que des bruts de f\u00fbt, la quasi-totalit\u00e9 des whiskies commercialis\u00e9s en France ont d\u00e9j\u00e0 \u00e9t\u00e9 \u00ab\u00a0coup\u00e9s \u00e0 l\u2019eau\u00a0\u00bb. En production, ce que l\u2019on nomme la r\u00e9duction n\u2019est rien d\u2019autre que l\u2019adjonction d\u2019eau pour arriver \u00e0 un degr\u00e9 particulier. En effet, un whisky n\u2019exprime pas les m\u00eames ar\u00f4mes \u00e0 50 qu\u2019a 40%. Il se peut qu\u2019un single malt soit parfait \u00e0 43% mais un peu d\u00e9s\u00e9quilibr\u00e9 a 44%. La tourbe notamment, a tendance \u00e0 gagner en intensit\u00e9 \u00e0 mesure que le degr\u00e9 diminue (ajouter un trait d\u2019eau dans un Octomore a 60%, l&rsquo;exp\u00e9rience est saisissante !). Lorsqu&rsquo;il commande un whisky, c&rsquo;est tout naturellement qu&rsquo;on lui apporte un Highball.<\/em><\/span><\/figcaption><\/figure>\n<p><b>Le japon, gardien de la tradition<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Si le Whisky allong\u00e9 \u00e0 l\u2019eau p\u00e9tillante n\u2019est plus au go\u00fbt du jour en Europe, ce mode de consommation datant des ann\u00e9es 50 n\u2019a jamais totalement disparu au Japon et a m\u00eame connu un regain de popularit\u00e9 au d\u00e9but du mill\u00e9naire sous l&rsquo;appellation \u201cHighball\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">D\u00e8s le milieu des ann\u00e9es 50, la tendance du whiskies allong\u00e9s \u00e0 l&rsquo;eau p\u00e9tillante est port\u00e9e par les \u00ab\u00a0Torys Bar\u00a0\u00bb (une initiative lanc\u00e9e par Kotobukiya, le futur Suntory). On en comptera 35 000 \u00e0 travers tout le pays. L&rsquo;id\u00e9e \u00e9tant de promouvoir le whisky maison Torys, particuli\u00e8rement populaire dans sa version Highball.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Plus tard, en 1972, Suntory lance une nouvelle campagne intitul\u00e9e \u201cNihonbashi Sakusen\u00a0\u00bb (\u00ab\u00a0Op\u00e9ration baguettes\u00a0\u00bb mais aussi le nom d&rsquo;un quartier d&rsquo;affaires de Tokyo). L&rsquo;objectif : cibler les \u00e9tablissements o\u00f9 l&rsquo;on mange et promouvoir la consommation du whisky \u00e0 table \u00e0 travers le Highball mais surtout le Mizuwari (un Highball \u00e0 l&rsquo;eau plate).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le succ\u00e8s est au rendez-vous et la marque de whisky \u00ab\u00a0Suntory Old\u00a0\u00bb, boost\u00e9e\u00a0 par ce mode de consommation passe d\u2019un million de caisses vendues en 1970 \u00e0 plus de 12 millions en 1980 (\u00c0 l&rsquo;\u00e9poque c\u2019est a peu pr\u00e8s autant que les ventes mondiales de Johnny Walker !). Litt\u00e9ralement balle (ou boule) haute ?\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">En fait, ce nom est une r\u00e9f\u00e9rence \u00e0 un verre en forme de cylindre \u00e9lanc\u00e9 dans lequel est traditionnellement servi les cocktails compos\u00e9 d\u2019un spiritueux et d\u2019un mixer p\u00e9tillant. Dans son ouvrage The Joy of Mixology (2003), Gary Regan explique que se verre tirerait lui m\u00eame son nom d&rsquo;un ancien terme ferroviaire d\u00e9signant l&rsquo;indicateur \u00e0 boule reli\u00e9 \u00e0 un flotteur \u00e0 l&rsquo;int\u00e9rieur du r\u00e9servoir d&rsquo;eau d&rsquo;un train \u00e0 vapeur et qui indiquait au chef de train le niveau du r\u00e9servoir d\u2019eau .<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Quoi qu\u2019il en soit, au pays du soleil levant, on garde le nom mais on troque volontiers l&rsquo;\u00e9l\u00e9gant verre \u00e0 cocktail pour une chope de bi\u00e8re bard\u00e9e de gla\u00e7ons et arros\u00e9e d\u2019un quart de whisky pour trois quart d\u2019eau p\u00e9tillante !\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">On est donc loin de l\u2019image d\u2019\u00c9pinal du gentleman s\u00e9rieusement concentr\u00e9 sur son whisky et engonc\u00e9 dans son fauteuil-le club.
